I wanted to make a cookie using cream cheese but did not have any in my fridge. As luck would have it I did have goat cheese. So I built my recipe around the goat cheese incorporating flavors that would enhance it's flavor like rosemary and figs, which are some of my favorite ingredients.

Zucchini Cake

  • 1 1/4 cup of sugar
  • 1/2 cup of butter
  • 1/2 cup oil
  • 2 eggs
  • 1 tsp. Vanilla
  • 1/2 cup of sour cream
  • 2 cups shredded zucchini
  • 2 1/2 cups flour
  • 4 tbsp. Cocoa
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup of chocolate chips


Cream butter. Add sugar and oil. Add eggs, vanilla and sour cream. Sift dry ingredients. Add to creamed mixture. Stir in zucchini.

Spoon onto greased 9 x 13 inch pan. Sprinkle with topping or 1/2 cup chocolate chips.

Bake all together at 325F for 40 to 50 minutes.
