I Love Watermelon And Bread So Thought Would Create~ Rather De'Lish With A Nice Cup Of Coffee' Rather Like a Coffee Cake Not Too Sweet~

Ingredients

  • 3 Medium Eggs
  • 1 Cup Cooking Oil
  • 2 Cups Sugar (Real)
  • 2 Cups Grated Watermelon Rind
  • 3 Cups Of Flour
  • 2 tsp. Vanilla
  • 1 Vanilla Bean
  • 1 tsp. Baking Soda
  • 1/2 Tsp. Baking Powder
  • 1 tsp. Sea Salt
  • 1 tsp.Cinnamon
  • 1/2 Chopped Pecans

Instructions

Preheat Oven To 325 Degrees. Grease And Flour 2 Loaf Pans. Beat Eggs, Then Add Oil, Sugar, Grated Watermelon Rind And Vanilla Note: "Take Vanilla Bean Slit Through The Middle Then Being Careful Use The Back Of The Knife Blade And Run It Through The Bean~ As So Can Easily Get All The Beautiful Vanilla Seeds". Continue Cream Together. Sift And Measure 3 Cups Of Flour, Then Sift Together Flour, Soda, Baking Powder, salt and Cinnamon. Add Sifted Ingredients To Mixture And Mix Until Thoroughly Blended. Add Chopped Nuts. Pour In The Two Loaf Pans Bake For 1 Hour.
