A Rich Gravy Of Tomato Essence' That Is Enjoyed For Breakfast With Hot Buttermilk Biscuits My Grand Mother Mrs. Lola Lee Walker Mercier' Was My Inspiration~ As A Child Being Awakened By Smell Of Her Wonderful Biscuits And Gravy~ But It Seems To Awaken Just As Was Resting So Very Well Such Hot Humid Summer Night's Of Louisiana~ But Always Was So Cool In The Mornings~ What Better Way To Be Awakened~

Ingredients

  • 3 Tablespoons Of Bacon Drippings ( That Is The Grease After Frying Your Bacon)
  • 3 Tablespoons Of Flour
  • Sea Salt (To Taste)
  • Fresh Cracked Black Pepper Corns ( To Taste)
  • I 10 oz Can Heinz Tomato Paste
  • 20 oz Potato' Water ( The Water Saved After Boiling Potatoes)
  • * Potato Water Gives The Gravy A Richer Flavour' And Helps Thicken
  • * Adjust To Desired Thickness Might Need A Little More If To Thick
  • Mrs. Lola Lee Walker Mercier Original Recipe

Instructions

In A Seasoned Cast Iron Small Dutch Oven ( If Don't Have That Get A Deep Skillet), Place Your 3 tablespoons Of Bacon Drippings In The Skillet Over Low Heat, Then Place The 3 Tablespoons Of Flour Thus making A ROUX, Stir Continuously (With Wooden Spoon) Making Sure Not To Stick And Burn) When Deep Brown Then Add The Potato' Water Being Very Careful As It's Hot And Will Boil To Top Add Just A Little At A Time. Then Add The 10 Oz Can Heinz Tomato Paste A Little At A Time Continuously, Then Add The Sea Salt , And Black Cracked Pepper Corns To Your Desired Taste~ Then When Completed Pour Through A Strainer Making Sure No Lumps, Then Pour In Your Choice Of Gravy Boat With Dish~ This Recipe As Stated Goes Beautifully As A Breakfast Gravy With Southern Buttermilk Biscuits~ I Do Hope You Enjoy This Gravy As Much As Mine Has~
