My flavor inspiration was Turtles chocolates and I wanted to make a chewy on the outside, fudgy on the inside chocolate cookie studded with toffee and pecan pieces.

Ripe Plantain Chutney

  • (Salt and Pepper should be used but to preference)
  • Olive oil - 1 tbsp/1/4 c
  • Plantain - 1 c
  • Cherry tomato - 10
  • Red onion - 1/4 c
  • Red Bell Pepper - 1/4 c
  • Yellow Bell Pepper - 1/4 c
  • Garlic Clove - 1
  • Golden Raisins - 2 tsp
  • Garnish:
  • 2 tbsp cilantro


Saute plantains in 1tbsp of olive oil for 5 min. Add the tomato, onion, bell peppers,garlic, and raisins. You will also add the 1/4 c of oil to compensate for additional ingredients. Saute 5-6 min and season to taste. Serve hot and add cilantro as garnish
