Used red quinoa-very colorful. I typically am not a huge fan of quinoa but this was yummy.
Soak quinoa in cold water for 30 minutes.
Rinse and drain quinoa.
Heat 1 Tbsp. olive oil in large saucepan and add finely chopped onion.
Sauté until translucent.
Add drained quinoa and spread it out in the pan.
Brown the seeds until they are golden brown (sometimes it pops).
Add dried fruit and cinnamon.
Add 2 cups of water, bring to a boil, cover and reduce heat to simmer for 15 minutes or until liquid is absorbed.
Remove from heat and with the cover on set it aside for 10 minutes.
Stir in chopped nuts.
