Description

This is a different kind of dessert, but wonderful none the less. A perfect dessert for winter time, serve with some cream, custard or even some ice cream. If avoiding alcohol, use pear juice as an alternative to the pear brandy.

Ingredients

  • 3 eggs
  • Cup of sugar
  • Teaspoon of lemon zest
  • 1 & 1/2 cups heavy cream
  • 2 teaspoons vanilla extract
  • 6 teaspoons flour
  • 1 teaspoon salt
  • 2 tablespoons of Pear Brandy
  • 2 large pears or 3 small pears

Instructions

Mix up the eggs and sugar in a bowl. Slowly combine the heavy cream then add the vanilla extract, the flour, the lemon zest and salt.
Stir it up. Mix in the pear brandy and refrigerate.
While the batter is in the fridge, peel and core the pears. Cut the pears into quarters and slice vertically up each pear. Lightly dust a casserole dish with sugar and arrange the pear slices however you want. Pour the refrigerated batter over the pears, I make sure you can see the pears sticking out over the top. Cook for 40-45 minutes or until golden.
