Who knew baking could be healthy!!! I came across this one while browsing twitter and it brought me to Amy's Healthy Baking Blog. There are so many excellent healthy baking dishes on this blog. Definitely worth checking out!
1. Whisk together the oats, flour, baking powder, cinnamon and salt in a medium bowl. In a separate bowl, whisk together the coconut oil, egg and vanilla. Stir in the agave. Add in the flour mixture until just incorporated. Fold in the raisins. Chill the cookie dough for 30 mins.
2. Preheat the oven the 325 degrees F and line a baking sheet with parchment paper.
3. Drop the cookie dough into 15 rounded scoops onto the prepared baking sheet and flatten slightly. Bake for 11-14 minutes and cool on cookie sheet for 10 mins before transferring to wire rack.
