Quick and easy to make. The flavours from the basil and onion give the tomato a great taste.
Cut the bottom of the tomatoes (just enough so that the tomato can stand upright). Cut the top of the tomato removing the core. Finely chop both the onion and basil (or use dried basil). Stuff the tomato with onion, basil, and add salt and pepper as desired. Drizzle with olive oil, and top with Parmesan cheese.
Heat grill to medium-high. Place on upper grill, and cook until Parmesan cheese is golden brown.
