This recipe uses a brine solution that gives the pork chops some added flavour and keeps them nice and moist when grilling.
First, we need to create a brine to soak the chops in. This will keep it moist when we grill and give it some added flavour.
In a large bowl, mix together: warm water, salt, sugar, rosemary and whatever's left of the beer you're drinking (optional). This will create a nice brine solution. Add any additional ingredients to the brine to give it extra flavour. Personally, I like rosemary, but you can substitute with anything you like.
Let the chops soak in the brine solution for 1 hour. Pat chops dry with a paper towel. Season with fresh ground black pepper.
Preheat BBQ to medium/high and grill turning frequently to avoid burning. I usually sear the meat on both sides, and finish cooking them on the top grill.
