Grilled chicken, roasted red peppers, zucchini and goat cheese wrapped in a ciabatta baguette? Yep. Just did, and it's awesome!
Preheat BBQ to high and grill red peppers until blackened. Rinse over cool water and peal away blackened skin. Cut into strips, removing any seeds. Set roasted red peppers aside for later use.
Slice chicken into thin fillets and slice zucchini into thin slices lengthwise. Grill chicken and zucchini until done.
Slice ciabbata into two slices. Spread goat cheese generously on first slice. Top with zucchini, roasted red peppers and grilled chicken. Drizzle with with olive oil and salt and pepper to taste. Place top of ciabbata onto sandwich, cut into quarters and serve.
