Discovered the recipe but then tweeked it my own by adding some Real Hawaiian Flair!

Greek Rice and Feta Salad

  • 1 1/2 cups of long grain white rice
  • 1/2 green pepper chopped
  • 1/2 English cucumber chopped
  • 1/3 cup of sliced green onion
  • 1/3 cup of black olives chopped
  • 1 large tomato seeded and chopped
  • 1/4 cup of Miracle Whip Salad Dressing
  • 1 cup of feta cheese


Prepare rice as per package instructions. Add the vegetables and 3/4 cup (175mL) of the Feta cheese.

Combine the 1/4 cup of Miracle Whip. Mix well. Cover and chill for 2 hours.

Add remaining feta and mix and serve.
