You won't believe its made of beans! It is rich and fudgy, just like how it should be. This recipe is vegan and gluten-free. We have an 8-hectare farm that produces grains and beans. I wanted to try something new with the beans. I searched online and found this recipe. I tweaked the recipe a little to suit my taste and changed the procedure as well to make it easier. Enjoy!
Preheat oven to 350 degrees F (176 C). Lightly grease a 9 inch square pan.
Combine the flax and water in the food processor. Pulse a couple times and then let rest for 2 minutes
Add the beans and sugar and puree until smooth. Transfer it to a bowl and add the remaining ingredients. Mix thoroughly.
If the batter appears too thick, add a Tbsp or two of water and pulse again. It should be slightly less thick but not runny.
Evenly distribute the batter into the pan and smooth the tops with a spatula.
Optional: Sprinkle with chocolate chips.
Bake for 20-26 minutes or until the tops are dry and the edges start to pull away from the sides.
Remove from oven and let cool for 30 minutes before removing from pan.
