My flavor inspiration was Turtles chocolates and I wanted to make a chewy on the outside, fudgy on the inside chocolate cookie studded with toffee and pecan pieces.

Cuban Black Bean Dip

Description

This was given to me by a friend. I was looking for a bean dip recipe that was a little different than the usual.

Ingredients

  • BEANS
  • 1 tsp vegetable oil
  • 2 medium onions (1cup chopped)
  • 1/4 cup chopped green pepper
  • 1 tsp cumin
  • 1/2 tsp celery salt
  • 1/2 tsp oregano
  • 1/8 tsp red pepper
  • 2 tsp fine chopped garlic
  • 2 15 ounce cans black beans (drain and reserve 1/2 cup liquid)
  • Topping
  • 1 container sour cream
  • 1/4 cup green onions
  • 2 tbs chopped cilantro
  • 1/2 cup thick salsa
  • 1 tomato
  • 4 ounces shredded cheddar or cheddarella cheese

Instructions

In 10-12" skillet heat oil
Add onions, green pepper, cumin, celery salt, oregano, red pepper, & garlic. Cook over medium heat, stirring occassionally until green peppers and onions are tender (4-5 min) Add beans and reserved liquid.
Continue cooking mashing beans w/fork about 5 min. Spread bean mixture on lrg serving plate forming a 11-12" circle. Cover & refrigerate 15 min.
"While Chilling Beans"
In sm bowl stir together sour cream, gr onions, & 2 tbs chopped cilantro. Spread over bean mixture. Then spread salsa over sour cream mixture, top with tomato & cheese. Sprinkle with additional cilantro and serve immediately or cover and refrigerate.
