This is a fresh and very basic, simple yet delightfully healthy salad that can be accompanied with almost any dish. Try with tuna, salmon, lemon-grilled chicken or mixed in with a creamy pasta and sauce.
All we do here is grate all the courgette together in a bowl and throw on the fresh mint. Sprinkle the chopped red chilli over the vegetables and add a little olive oil, followed by a pinch of salt. Remember to keep mixing to incorporate all the different flavours and seasoning. Pour over the lemon juice with the black pepper and the red chilli flakes. Combine and serve.
