Coconut Macaroons

Ingredients

  • 3/4 cup sugar
  • 2 1/2 cup unsweetened, shredded coconut
  • 2 egg whites
  • 1 tsp vanilla extract
  • pinch of salt

Instructions

1. Pre-heat oven to 325 F.
2. Line baking sheet with parchment paper and set aside.
3. In a large bowl, combine sugar, coconut, egg whites vanilla and salt using your hands. Mix well, completely combining all ingredients.
4. Use 1 1/2 tsp to form mounds and place on prepared baking sheet 1 inch apart. I find dipping the spoon in cold water before scooping the mixture works best.
5. Bake until golden brown (16-17 minutes).
