The classic Chicken Caesar Salad might just become a staple at your house. Whip up the quick homemade dressing and fresh toasted croutons and you've got a delicious main dish salad.
Preheat oven to 425 degrees.
Cut up bread into 1" cubes. In a medium bowl add oil, Parmesan cheese, salt and pepper. Add bread cubes and toss to coat. Spread on a cookie sheet and bake at 425 for 5-10 minutes until crisp, stirring occasionally.
Meanwhile, squeeze juice of one lemon into a bowl and mix in anchovies, oil, Parmesan cheese and mayo.
Place lettuce in a salad bowl and add chicken and croutons (and penne pasta if using). Toss with dressing and serve.
