Chewy Cherry Almond Bars

Description

I've had this recipe for many years and just attempted to make it now. I don't remember where I found this one, it was so long ago, but was definitely a hit with my family.

Ingredients

  • 1 cup butter
  • 2 cups packed brown sugar
  • 2 tsp baking powder
  • 1 egg
  • 1 tsp almond extract
  • 2 cups all purpose flour
  • 2 cups regular rolled oats
  • 1/2 cup sliced almonds
  • 1 12 oz jar cherry preserve

Instructions

1. Preheat oven to 350. Line a 13 X 9 X 2 inch baking pan with parchment paper and set aside.

2. In a large bowl beat butter with electric mixer on medium speed for 30 seconds. Add brown sugar and baking powder and beat until combined. Beat in egg and almond extract until combined. Beat in as much flower as you can with the mixer then beat the remaining flour, the oats and the almonds with a wooden spoon.

3. Remove 1/2 cup of the dough and set aside. Press the remaining dough evenly into the bottom of the pan. Spread with cherry preserve and crumble the remaining dough over the preserve.

4. Bake in preheated oven for 35 mins or until lightly browned. Cool completely before cutting into bars. Makes 36 bars.
