I have often used this combination in savory dishes (pistachio and fennel crusted rack of lamb with tart cherry sauce. I like the combination of flavors so much I decided to try to make a cookie from them. The green an red elements pair well with the holidays.
Preheat oven to 350 degrees
Combine dry ingredients flour, baking powder, and salt in a bowl or on parchment paper.
In a mixing bowl cream butter and sugar on medium speed until light and fluffy
Add egg and mix thoroughly.
Add almond extract fennel and lemon zest mix until incorporated
Gradually add dry ingredients on low speed until fully incorporated
Add nuts and cherries mix until fully dispersed throughout the dough
Line baking sheets with parchment paper
Drop table spoon sized cookies on the parchment paper (I use a 1” scoop for this)
Bake 10 -12 minutes
