Cheddar and Apple Scones

I love scones but have never attempted to make them until now. Turns out they are pretty easy to make and you can pretty much use any fruit combination. I think I found this recipe in a chatelaine magazine years ago.

Ingredients

  • 7 tbs cold butter
  • 1 granny smith apple (cored, peeled and cut into 1/2 inch pieces)
  • 2 tbs sugar
  • 2 cups all purpose flour
  • 2/3 cup & 1/4 cup shredded cheddar cheese
  • 1 tbs baking powder
  • 3/4 tbs salt
  • 1/4 tbs pepper
  • 3/4 cup buttermilk

Instructions

1. In a non-stick skillet, over medium high heat, melt 1 tbs butter. Add apple and 1 tbs sugar. Cook, stirring until apples are tender and lightly browned. Cool 15 mins.
2. combine flour, 2/3 cup cheese, baking powder, salt, pepper and remaining sugar. Cut in remaining butter until mixture resembles course crumbs.
3. With fork, stir in buttermilk until moistened. Stir in apples until dough forms. On lightly floured surface knead dough until smooth.
4. Shape into 9" disc. Cut into 8 wedges. Brush with water and sprinkle with cheese. Transfer to baking sheet 2" apart. Bake until golden (18-20 minutes).
