Asian Grilled Salmon

Oriental-inspired, marinated Salmon; full of flavour! Add any desired vegetable, enjoy hot or chilled.

Ingredients

  • Salmon fillet
  • 1 Garlic clove, pressed
  • 2 tablespoons Dijon mustard
  • 2 tablespoons soy sauce
  • 5 tablespoons olive oil
  • Bunch of asparagus
  • Pinch of crushed red pepper flakes
  • Salt
  • Pepper

Instructions

Take your fillet of salmon, divide if necessary and place in a deep dish. Stir together in a bowl; the garlic, the Dijon mustard, the soy sauce, and 4 tablespoons of the olive oil. Whisk it up into an even mixture. Once mixed, pour the sauce over the salmon fillet and refrigerate, covered, for at least 4 hours. Best to leave it overnight.
Once marinated, proceed to grill the salmon in a griddle over the stove preferably, if not then a wok will do fine. Reserve the marinate. Steam the salmon on one side for 5 minutes and then flip to the other side for another 5 minutes. Chop up the asparagus and throw into a pan with the remaining tablespoon of olive oil, the red pepper flakes and season with some salt and pepper. Turn the salmon again. Sauté the asparagus for another 5 minutes until tender. Serve the salmon with the asparagus and garnish with the remaining marinade.
