I wanted to make a cookie using cream cheese but did not have any in my fridge. As luck would have it I did have goat cheese. So I built my recipe around the goat cheese incorporating flavors that would enhance it's flavor like rosemary and figs, which are some of my favorite ingredients.

Ingredients

  • White Onion - 1 c
  • Cubanelle Pepper - 1 c
  • Green Bell Pepper - 1 c
  • Garlic Cloves - 6
  • Cilantro - 1/2 c
  • Water - 2 tbsp
  • Beans - 1 c
  • Pork - 1c
  • Water - 3 c
  • Corn oil - 2 tbsp
  • Chorizo - 1/2 c
  • Bacon - 1/2 c
  • White Onion - 1/3 c
  • Garlic Cloves - 2
  • Cilantro - 1 tbsp
  • Green Bell Pepper - 2 tbsp
  • Red Bell Pepper - 2tbsp

Instructions

First make a green sofrito mix. Add 1c onion, pepper, gr bell pepper, 6 garlic cloves, cilantro, and water to a blender. Blend till mixture is fully mixed. Set in fridge to chill
In a pot cook beans with 3c water and pork. bring to a boil and drain once fully cooked
While you're beans are going get out a saute pan. Use tbsp of corn oil and add chorizo, bacon saute for a few min. Add onion and garlic cook till soft, than add cilantro and red/green bell peppers cook till they are soft. When you're beans are done add 1c of them and cook additional 2 min THan add 2c rice and cook 4 min. To garnish you will take 2 tbsp of oil and 1/2c onion, 2 garlic cloves and saute till onion is translucent. Add 1 jalapeno and 3 tbsp of your sofrito cook for 2 min. Add 1/4 c tomato for 2 more min. Than you will add 1c water squash pumpkin and 2 tsp adobo spice all to the beans than mix well and serve
