Zucchini Cake

Ingredients

  • 1 1/4 cup of sugar
  • 1/2 cup of butter
  • 1/2 cup oil
  • 2 eggs
  • 1 tsp. Vanilla
  • 1/2 cup of sour cream
  • 2 cups shredded zucchini
  • 2 1/2 cups flour
  • 4 tbsp. Cocoa
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup of chocolate chips

Instructions

Cream butter. Add sugar and oil. Add eggs, vanilla and sour cream. Sift dry ingredients. Add to creamed mixture. Stir in zucchini.



Spoon onto greased 9 x 13 inch pan. Sprinkle with topping or 1/2 cup chocolate chips.

Bake all together at 325F for 40 to 50 minutes.

Every Halloween our family would make these after carving our pumpkins. Be careful not to leave them in the oven too long.
